Appearance: Pale yellow with hints of green. Fine lively bead.
Aroma/bouquet: Pear, lemon peel, lime. Yeasty with chalky minerality.
Palate: Grapefruit, tart apple, smoky minerality.

Taittinger Comtes de Champagne Blanc de Blancs 2004
Production
Taittinger uses the méthode champenoise for their champagne production. The Comtes de Champagne Blanc de Blancs 2004 is composed of 100% Chardonnay grapes. The Comtes de Champagne Blanc de Blancs Prestige Cuvee is often sourced entirely from crus of the Cotes Des Blancs. 5% of the blend has aged for 3 to 4 months in oak barrels with 1/3 of the barrels replaced yearly. Only first press juice is used in the production. The Taittinger Comtes de Champagne Blanc de Blancs is primarily sourced from the grand cru villages of Avize and Le Mesnil-sur-Oger with additional grapes coming Cramant, Oger, Chouilly, Vertus, Pierry and/or Bergeres-les-Vertus. It is aged 8 or more years on the lees before disgorgement. The Taittinger harvest for Chardonnay began on September 20.
