Tasting Notes
Appearance: Pale yellow/straw. Fine persistent bead.
Aroma/bouquet: Peach, orange zest, toasted almonds, nice minerality, notes of honey and brioche
Palate: Creamy mouthfeel. Lemon, green apple, peach, caramel, flint.

Taittinger Comtes de Champagne Blanc de Blancs 2000
Production
Taittinger uses the méthode champenoise for their champagne production. The Comtes de Champagne Blanc de Blancs 2000 is composed of 100% Chardonnay grapes. The Comtes de Champagne Blanc de Blancs Prestige Cuvee is often sourced entirely from crus of the Cotes Des Blancs. 5% of the blend has aged for 3 to 4 months in oak barrels with 1/3 of the barrels replaced yearly. Only first press juice is used in the production. The dosage was 10 grams/liter. The Taittinger Comtes de Champagne Blanc de Blancs is primarily sourced from the grand cru villages of Avize and Le Mesnil-sur-Oger with additional grapes coming from Cramant, Oger, Chouilly, Vertus, Pierry and/or Bergeres-les-Vertus. It is aged 8 or more years on the lees before disgorgement. Grapes for the 2000 vintage were harvested from September 13 to 25.
