Production
Bollinger uses the méthode champenoise for their champagne production. The Vieilles Vignes Francaises 2004 is composed of 100% Pinot Noir. The grapes were harvested on September 30. Grapes used for this special wine are 100% Grand Crus harvested from three plots that survived the phylloxera scourge of the late 1800s. Still planted on their own rootstocks, these plots are grown in the same manner they were when the House of Bollinger was founded. Production of Bollinger Vieilles Vignes Francaises is very small. |
