Production

Louis Roederer Carte Blanche Sec Champagne
is similar to the Carte Blanche Extra Dry except for the higher level of sugar in the dosage. Louise Roederer uses the Méthode champenoise for their champagne production.

The Carte Blanche Sec blend is composed of 40% Pinot Noir, 40% Chardonnay and 20% Pinot Meunier. 5% of wines are matured in oak casks with weekly batonnage. 10% of reserve wines are matured in casks. Partial malolactic fermentation occurs. This non-vintage Champagne is a blend of 6 years of harvesting, a part of which comes from the Louis Roederer reserve wine collection, matured in oak casks for several years.

Louis Roederer Carte Blanche Sec is matured for 3 years in the cellar before disgorgement. The sugar level is 32 grams/liter compared to 18 grams/liter for the Carte Blanche Extra Dry. Carte Blanche Sec rests for 6 months after disgorgement.
