Appearance: Light yellow color with well integrated mousse.
Aroma/bouquet: Caramel apple, and honey with just a hint of fresh baked bread. Raspberry, strawberry and peach cobbler.
Palate: Off dry, well balanced. The sweetness level diminishes the perception of acidity. Candied almond, lemon/lime, tangerine, and strawberry with hints of freshly baked bread. Good minerality. Creamy texture with medium to fine beads. Medium plus finish.
Additional comments: A refined slightly sweet Champagne with nice year to year consistency.

Production
Louis Roederer Carte Blanche Extra Dry Champagne is similar to Brut Premier except for the higher level of sugar in the dosage. Louise Roederer uses the Méthode champenoise for their champagne production.
The Carte Blanche Extra Dry blend is composed of 40% Pinot Noir, 40% Chardonnay and 20% Pinot Meunier. 5% of wines are matured in oak casks with weekly batonnage. 10% of reserve wines are matured in casks. Partial malolactic fermentation occurs. This non-vintage Champagne is a blend of 6 years of harvesting, a part of which comes from the Louis Roederer reserve wine collection, matured in oak casks for several years.
Louis Roederer Carte Blanche Extra Dry is matured for 3 years in the cellar before disgorgement. The sugar level is 18 grams/liter. Carte Blanche Extra Dry Champagne ages for 6 months after disgorgement.
