Off-dry – Slightly sweet.

Oaky – Aromas such as vanilla and toast typically encountered in wine that has been in contact with new oak during vinification.

Oenology – See Enology.

Organic wine – Wine made from grapes that are grown without chemical intervention such as herbicides, fertilizers or pesticides. Compounds such as sulfur are also kept to a minimum throughout the vinification process.

Oxidized – Generally defined as wine that has been over exposed to oxygen. When unintentional, the result is faulted wine resulting in loss of fruit attributes and some vinegar like characteristics. Some wines such as Sherry and Madeira are intentionally oxidized and typically exhibit nuttiness.
