Tasting Notes
Appearance: Salmon with copper and crimson highlights. Very fine mousse, somewhat timid.
Aroma/bouquet: Strawberry, raspberry, cherry, candied fruit, fresh minerality and toastiness.
Palate: Wonderful creamy texture, plenty of red fruit, bitter cherry, citrus, minerality. Lingering finish.
Additional comments: Rich, great with food but still delicate enough to enjoy on its own. Well balanced.
When to drink: Dom Perignon Rose' 2000 Champagne is ready to drink now through 2022.

Dom Perignon Rose' 2000
Production
Dom Perignon uses the méthode champenoise for their champagne production. Dom Perignon only makes vintage champagne, therefore there are no reserve Dom Perignon wines. Fermentation occurs exclusively in stainless steel tanks with cultured house yeast strains and full malolactic fermentation. Pinot Meunier is not used in the blend. The percentages of Pinot Noir and Chardonnay vary from year to year with the typical blend for Vintage Dom Perignon Rose' averaging approximately 60% Pinot Noir (a portion of which is still wine) and 40% Chardonnay. 2000 was warm but a cooler than average July brought rain and hail. Chardonnay grapes were supple and complex with Pinot Noir supplying structure.
Dom Perignon has access to the 17 grand cru villages in champagne. The main focus of the blend is typically from the 8 famous grand cru villages of Verzenay, Chouilly, Cramant, Bouzy, Avize, Ay, Le Mesnil and Mailly and of course the famous premier cru from Hautvillers where the Abbey of Dom Perignon is located..
