Pol Roger Sir Winston Churchill 2000
Production
Pol Roger uses the méthode champenoise for their champagne production. Sir Winston Churchill 2000 champagne is composed of a blend of Pinot Noir and Chardonnay. The exact formula is a closely guarded family secret, but Pinot Noir is the dominant grape. All grapes are from grand cru vineyards that were already established during Sir Winston Churchill's lifetime. The juice undergoes a double settling process (double debourbage) at cool temperatures prior to fermentation. Fermentation occurs in stainless steel tanks at cool temperatures. The wine undergoes full malolactic fermentation. Each variety and each grand cru village is vinified separately until final blending. The wine rests in the Pol Roger cellars for 11 years before release. All bottles in the Pol Roger line-up are riddled entirely by hand.
