Appearance: Medium yellow gold with the signature Pol Roger ultra fine mesmerizing bead.
Aroma/bouquet: Pear, lemon, blanched almond, honey, with minerality and subtle yeasty/biscuity notes.
Palate: White peach, citrus, lemon zest, toasted almonds, chalky minerality with long, velvety finish.

Pol Roger Sir Winston Churchill 1999
Production
Pol Roger uses the méthode champenoise for their champagne production. Sir Winston Churchill 1999 champagne is composed of a blend of Pinot Noir and Chardonnay. The actual percentage of each grape in the blend is a closely guarded secret, but Pinot Noir is said to be the dominant grape. All grapes are from grand cru vineyards already established during Winston Churchill's lifetime. The juice undergoes a double settling process (double debourbage) at cool temperatures prior to fermentation. Fermentation occurs in stainless steel tanks at cool temperatures. The wine undergoes full malolactic fermentation. Each variety and each grand cru village is vinified separately until final blending. The wine rests on the lees for 10 years before disgorgement. All champagne in the Pol Roger line-up is riddled entirely by hand.
