Tasting Notes
Appearance: Medium straw, lively small bubbles.
Aroma/bouquet: Baked apple, honey, hints of peach.
Palate: Pear, brioche, apple, citrus, with notes of chalky minerality.
Additional comments: Nice fresh champagne, somewhat young.
When to drink: Bollinger Special Cuvee Champagne is ready to drink now but will likely improve with another year's age through 2018. Bollinger Special Cuvee is typically at its peak from 1 to 5 years of release. Best served at 50 to 54 degrees fahrenheit.

Bollinger Special Cuvee
Production

Bollinger uses the méthode champenoise for their champagne production. The Special Cuvee is composed of 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier. At least 85% of the grapes used for production are from grand and premier crus. Wines are aged in wood before blending. Bollinger cellars their non-vintage champagne a minimum of 30 months on lees (double the minimum legal requirement). The dosage ranges from 8 to 9 grams/liter.

More than 100 years after Bollinger's signature champagne received the name 'Special Cuvee', it continues to symbolize the House's history and expertise.
