Cattier Production
Ace of Spades Blanc de Blancs is sold under the Armand de Brignac Blanc de Blancs name by the Cattier champagne house. Cattier uses the méthode champenoise for their Armand de Brignac Blanc de Blancs champagne production. The blanc de blancs is composed of 100% Chardonnay grapes from grand crus. The traditional Coquart press is still used. Only first press juice is used and all processing including riddling and disgorgement is done by hand. Riddling takes place over approximately 30 days. The dosage is a special family formula that is barrel aged for 9 months are more. The bottles are platinum colored with silver colored labels. The House is owned by the Cattier family in the Montagne de Reims region of Champagne.
