Dom Perignon 2000
Production
Dom Perignon uses the méthode champenoise for their champagne production. Dom Perignon only makes vintage champagne. Since every wine is vintage, there are no reserve Dom Perignon wines. Fermentation occurs entirely in stainless steel tanks with cultured house yeast strains and full malolactic fermentation. They do not use any Pinot Meunier in the blend. There is balance between the Pinot Noir and Chardonnay, so the assemblage will often be very close to 50% Pinot Noir and 50% Chardonnay, but percentage varies with each vintage and can range from approximately 40% to 60% for each grape. The objective is to include individual component wines that are considered the very best representation of a vineyard's terroir.
Dom Perignon has access to all 17 grand cru villages in champagne. The core of the blend is typically from the 8 famous grand cru villages of Bouzy, Cramant, Chouilly, Avize, Ay, Verzenay, Le Mesnil and Mailly along with the historical premier cru from Hautvillers where the Abbey of Dom Perignon is located.
