 Piper Heidsieck uses the méthode champenoise for their champagne production. The 2006 Brut is composed of  51% Chardonnay and 49% Pinot Noir from 17 vineyards. 16 of which were Grand Cru (9 vineyards)  Premier Cru (7 vineyards). Wines from specific crus and grape varieties are all vinified separately after harvest. Piper Heidsieck strives to minimize manipulation such as racking, filtering and centrifugation to preserve the typicity of the vineyards.  The wine is aged in the cellars for a minimum of 6 years prior to release and receives a dosage of 11 grams per liter.
