Single celled fungus that secretes enzymes necessary to the fermentation process. Sugar is used by yeast for energy. Major by-products are CO2 and Ethanol.

Having a bread-dough aroma and/or bouquet. It is a desirable quality in many sparkling wines and champagne, but not enjoyable in most still wines.
